Chicken and broccoli stir fry

3 chicken breasts - cut in strips or small cubes
1 -2 heads of broccoli (depends on how much you want) I use just the flowerettes myself.
1 tbs soy sauce - you can use ginger flavored soy sauce if you want
2 tbs of corn starch
1/2 cup of water - may need a little more - so keep some on hand just to thin out if the sauce gets to thick
1/2 tsp crushed garlic - if you use fresh - then 2 cloves diced
1 to 2 tbs oil - I like olive oil myself

mix the corn starch and 1/2 cup of water together and keep to the side - add 1/4 tsp of sugar if you want a sweeter sauce

Heat the oil in a pan - add the garlic - cook - stirring the garlic until it is browned
Add the cut up chicken and stir fry that until it is done
Add the broccoli (make sure you rinse it just before adding it) then stir this into the chicken (you may need to add a little water to this) Cover and stir occasionally until the broccoli is about where you like it cooked to - some like it more firm than others. lol

Add the corn starch and water mixture - stirring constantly as you pour it in so that you don't get lumps.

Add the soy sauce as well to this mixture. Cook until the stir fry is to the thickness you like - if it gets to thick - add more water to it to thin it down some. The sauce will thicken up quickly.

Serve with rice.

1 10 ounce can of Rotel diced tomatoes and green chiles (drained)
1 pound Velveeta
nuke it and stir at one minute intervals until cheese is melted
just right for dipping corn chips

Easy Chicken pot pie

3 or 4 chicken breast - boiled then cubed
2 cans of cream of potato soup
1 can of cream of celery soup
1 small bag of frozen peas and corn mix
2 pie crusts

Mix all items but the pie crust together - if you need to add a little chicken broth then do so.

Add spices if you like - i.e. garlic, salt, pepper (remember the soups do have sodium in them unless you get the low sodium kind)

Place 1 pie crust on the bottom of a deep dish pie pan or you can even use a small casserole dish.

Add the mixture of chicken and veggies

Top with the other pie crust

Pre heat oven to 375

place on a cookie sheet to catch any drippings

bake for 1 hour or until crust on top is browned.
